The story behind the Oklahoma Kolache Company

It all started in October 2013, when my father brought me an article from the New York Times, “ The Kolache: Czech, Texan or All-American?(All Three).” This was not the first article given to me by my number one fan, and toughest critic who has always tried to help keep me in the “know” of national and international food trends. There is something about the kolache, the warm breakfast food traditional to the Czech Republic. So, with respect for a traditional food, but also seeing a blank canvas, an endless opportunity to create savory and sweet treats restricted only by your imagination, we started. With the best group of eager and experimental cooks a chef could have behind him, we started making kolaches. First we came up with the perfect dough, a little sweet, soft and yeasty, crusty on the outside, you understand. Name a food item and we have wrapped it in dough and baked it, nothing was exempt from becoming a kolache. When the small spot next to Lucky’s became open, our experiment became a reality.
